It was most likely caused by something else. Psychosis can result from a lack of sleep but it will cause you to feel pretty severely deranged if I'm not mistaken. You might just have felt nervous because of your high sugar intake in a short amount of time. A blood sugar spike would most definately cause some jitters. That does not sound normal.
